A Coffee Dream in Panama’s Rainforests

Finca Deborah and Iris Estate: Quiet Desire and Intention

The story that Jamison Savage—a pioneer in the coffee world—crafted for Finca Deborah and began deep within the pristine rainforests of the Volcan region of Chiriqui, Panama. It is a journey marked by a quiet desire for a freer life and a path paved by intentionality.

Since 2008, Jamison has cultivated Finca Deborah into a sanctuary where Panama Geisha trees flourish under a rainforest canopy. Here, cherries absorb the vibrance of an untouched environment, while every process in the estate is powered by the sun.

Here precision meets stewardship. From the strategic planting to the progressive, nature-respecting processing protocols, every detail allows naturally occurring nuances to shine on the palate. It is a painstakingly detailed artistry that has graced the world stage since 2016 — most recently in the cups of US National Brewers Cup 2025 winner Pack Katisomsakul and 2025 Barista Champion Kay Cheon.

But this release is not just about Finca Deborah, it’s also featuring Iris Estate — Jamison’s other coffee estate, recognized as the highest elevation farm in all of Panama. Neighboring Finca Deborah in Chiriqui, Panama. Its equally star-studded glow pairs perfectly with her sister-estate.

It is a privilege to bring these decorated coffees to you, each one embodying the soul of the Volcan terroir. From the red grape, mango, and mandarin sweetness of Finca Deborah Nirvana, to the vibrant blueberry and passion fruit of Finca Deborah Enigma, alongside the delicate white florals and yuzu of Iris Estate Echo.

Jamison is selective about where he entrusts his harvest, and we are profoundly grateful to be among the few who get to share these stories with you. A ritual of stewardship and intention is waiting, one cup at a time.Â
