Cafesmo: Revealing Parainema’s Promise of Flavor Diversity 🇨🇴

Thrilled to again enjoy the Parainema, praise-worthy for the rare combination of resilience & potential for good cup quality. This time, it has come in harmony with the Obata variety in Finca Mira Flores for Filter and with Catuai in Finca Cascaritas for Espresso and Milk. 

It’s been hard not to geek out over this Honduran-developed cultivar since Hidardo Hernandez, founder of Cafesmo and Finca Cascaritas’ owner, told us at our Producer’s Talk last year all about how it was developed to improve farm-level productivity while also improving flavor profiles and diversity. 

For roasters like us, and even home roasters, the attraction is not only the flavor potential but also the physicality of the beans, which makes it easier to get to the sweet spot and consequently easier for the barista or the home brewer to calibrate. This leads to more predictability in brewing and more easily enjoyable cups.

The release of these coffees marks our third year of partnership with Hidardo, who is our only producing partner in Honduras. 

Thanks to them, we can continue to enjoy and share in the ongoing discovery of Honduras-grown varieties, like the Parainema, while enriching our coffee knowledge and our capacity to appreciate a greater diversity of specialty coffee’s sensory qualities through their flavor possibilities.
