Al Sanaa’ Collective
This lot is the collection of 50 farmers. The Sanaa' village is located in the region of Al-Qafr within the Ibb governorate. The temperature ranges between 9 C to 25 C with sun exposure lasting around 8 hours. This anaerobic process was done through bag fermentation. After our coffee cherries are picked, they are washed and placed in Ecotact bags for 72 hours maintaining a PH level of 3.6. The cherries are then placed on our raised beds (15kgs on each bed at a time) and left to dry between 14 to 20 days.

STORY OF YEMEN
The southern Arabian Peninsula is home to some of the world's earliest civilizations. Yemen is also the birthplace of coffee. In the 1400s, Yemeni monks brewed coffee for the first time, and afterward, the Port of Mokha would become the world's primary coffee market.

The remarkable Yemen Mokha is grown on terraces that cling to fertile mountains in the central highlands of Yemen. This way, the unique coffee is grown organically and naturally processed producing its exotic fruity and floral notes, as it has been for centuries. By establishing a community-based specialty coffee initiative, Mokha no Mocha intends to improve living conditions for Yemeni farmers, improve their income, and make their environment more sustainable. A better quality of life is achieved by supporting the Yemeni agriculture sector, which employs nearly 80% of the Yemeni population.
