Aurora is Archer's Savage Coffees exclusive Natural Anaerobic Geisha. This coffee stands at the most extended edge of fermentation tolerance on the processing side of our alternative model. Processing this coffee starts with harvesting very ripe Geisha cherries from multiple producer partners in both Volcan and Boquete Valley.
These farms are located at 1800 MASL+, have excellent agronomic and farm standards. Cherries are deposited in hermetically sealed tanks. CO2 is periodically infused into the tanks to regulated the rate of fermentation while temperature, PH, and other variables are closely monitored to ensure adequate progress levels. After more than 48 hours in tanks, the coffee is removed and placed on the 2nd level of a 3 tiered, raised beds system where this natural Geisha is slow dried for more than 20 days. Cherries are frequently agitated providing for even drying throughout the grain. After drying the coffee to proper levels it is removed and placed in grain-pro bags and placed in climate stable bodega where it stabilises and rests for more than 60 days after which it is carefully hulled, tested for density, size, and color. The coffee is then gently vacuum packed for export.
